Chicken Enchiladas

Ingredients: (makes 8-10 servings)
4 boneless chicken breast
1 can cream of chicken
1 package of Fajita seasoning
chili powder
1 can black beans (drained)
1 cup salsa
taco shredded cheese
1 can enchilada sauce
cheese sauce
black olives
sour cream 
small flour tortillas

Directions:
Boil the chicken in water for 45-60min (or until tender).  Shred the chicken with a fork.  
Add the cream of chickem, fajita seasoning packet, chili powder (to taste) and salsa.  Stir together.
Add the drained black beans and 1/2 cup shredded cheese to the mixture.

Add chicken mixture to tortillas and roll, place in greased pan.  
Pour enchilada sauce over top.
Top with remaining shredded cheese.  
 
Bake uncovered on 400 for 30min.  
 
Poor heated cheese sauce over top and serve with sour cream, black olives and Mexican rice.
