Chicken Thighs stuffed with Pancetta & Cheese

Ingredients:
1 package of boneless, skinless chicken thighs
deli sliced pancetta (found mine at Wal-Mart by the deli...pre-packaged)
provel cheese
flour
egg
salt/pepper
seasoning salt

Trim off any fat from the chicken. Butterfly open the chicken thighs and season them with salt/pepper and seasoning salt. Fill the chicken with pancetta and cheese. Roll the chicken up and secure with toothpicks!

Coat the chicken in flour, then dip in egg bath, then back into the flour to get a nice flour coat to make extra crispy.

Fry the breaded chicken until the out side is brown, then transfer to a baking dish and place in a 400 degree oven for 30min (or until chicken is done).
*remove the tooth picks-remember to count how many you have before frying*

Use the remaining provel cheese to create a cheese sauce by mixing it with milk and heating in the microwave. Pour cheese sauce over chicken and serve!

I served with fresh green beans and rice. enjoy!

(to make this dish a bit "healthier" you could just skip the frying part
and just bake longer. I just liked the crispy outside)
