Creamy Spinach-Artichoke Dip


1 16oz bag chopped spinach, frozen
1 tablespoon butter
2 tablespoons minced onion
1 clove garlic, minced
1 1/4 cup grated Parmesan cheese
1 block cream cheese
1/2 cup Italian cheese
red pepper flakes; to taste
1 can artichoke hearts, drained and chopped
Tortilla chips and carrots for dipping

1.  Bring a large pot of water to a boil.  Add in spinach and cook about 3 min.  Drain and rinse under cold water, squeeze out the excess moisture.

2.  Melt the butter in a large saucepan over medium heat.  Add the chopping onion, garlic and 1/2 teaspoon salt.  Cook until onion is soft (about 2 min).

4.  Stir in Parmesan cheese, Italian Cheese and cream cheese (softened).

5.  Return the pot to medium heat.  Add the spinach and artichokes and stir until the cheese melts.
